Mimi's Apple Muffins

I tweaked another recipe I found on the site to make it healthier . I'm always looking for a quick breakfast/snack muffin.
Ingredients:
1 cup milk
1 tablespoon lemon juice
2 cups diced apples (skin on)
1 cup brown sugar
2/3 cup unsweetened applesauce
1 egg
1 teaspoon vanilla
2 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon vanilla
Directions:
1. Combine milk and lemon juice. Let sit for at least five minutes.
2. In a small bowl combine the dry ingredients.
3. In a large bowl combine brown sugar, apple sauce, egg and vanilla.
4. Alternately add the milk mixture and the dry ingredients mixing well.
5. Stir in the apples.
6. Fill greased or lined muffin tins 2/3 full. Bake in a 350 oven for 20-30 minutes or until toothpick inserted comes clean.
