My grandma's simple recipe for salmon loaf. You can use canned salmon, but this is so much better with the fresh stuff. I usually cook a whole salmon on the grill and then make this with some of the leftovers. Ingredients:
2 cups cooked salmon |
1 egg |
2 tablespoons mayonnaise |
2 tablespoons lemon juice |
1/4 cup milk |
1/2 cup onion, chopped |
10 -12 crackers, crushed |
salt and pepper, to taste |
Directions:
1. Mix all ingredients together well. 2. Spread in greased 9x9 baking dish. 3. Bake 325 for 45 minutes. |
