Baked beans with a kick. Especially good with southern style pulled pork barbeque or fried chicken. I even like to use it to top off grilled burgers.
Ingredients:
1/2 lb smoked bacon
1 lb smoked sausage, diced
1 large onion, chopped
1 bell pepper, chopped
2 stalks celery, finely chopped
2 cloves garlic, minced
2-3 fresh cayenne peppers, very finely chopped (or use jalapenos)
1 can tomato paste
1 small can tomato sauce, plain
2 tbsp white sugar
1 tsp cider vinegar
3 small cans pork and beans
2 tbsp brown sugar
1 tbsp chili powder
1-2 tsp worcestershire sauce
salt and ground black pepper to taste
Directions:
1. Pre-heat oven to 350.
2. Fry bacon in a large, heavy Dutch oven over medium heat. Remove cooked bacon and retain drippings.
3. Add diced smoked sausage and sauté in bacon drippings until lightly browned.
4. Add onion, bell pepper, celery, cayenne pepper and garlic and sauté until tender. Season the mixture with salt and ground black pepper.
5. Add tomato paste, tomato sauce, white sugar and vinegar, mix well and heat to temperature.
6. Add beans, brown sugar, chili powder and Worcestershire sauce. Re-season with salt and ground black pepper as necessary.
7. Crumble in the bacon. Mix all ingredients well and cover the Dutch oven.
8. Place in oven and bake 30 minutes at 350.
9. Serve as a side dish or as a topping on burgers.
