A favorite Tex-Mex breakfast. Serve with sausage or chorizo, refried beans, and warmed corn tortillas, if desired.
Ingredients:
2 teaspoons butter
4 eggs, lightly beaten
2 dashes tabasco sauce
2 teaspoons onions, chopped
1/2 cup cheddar cheese, grated
2 teaspoons green peppers, chopped
tostados, crumbled
Directions:
1. Melt butter in large skillet.
2. Add Tabasco into eggs and pour into skillet.
3. Add onion and green pepper.
4. Stir.
5. When eggs are almost set, add cheese.
6. Turn heat to lowest setting, add tostados and finish cooking.
