Taste the sun in lush, ripe tomatoes tossed with artichokes, mushrooms and mozzarella cheese. From Land-O-Lakes Cookbook.
Ingredients:
3 cups lettuce, torn
2 cups fresh mushrooms, halved
1 cup mozzarella cheese, cubed
2 (6 ounce) jars marinated artichoke hearts, reserve marinade
2 medium tomatoes, cut into wedges
2 tablespoons parmesan cheese, freshly grated
1/4 teaspoon ground pepper
Directions:
1. in large bowl stir together all ingredients. toss to coat with reserved artichoke marinade.
2. serve.
