Middle Eastern Loose Meat Sandwich Or Pizza

Our daughter first tasted this recipe when a co-worker shared hers…it was love at first bite. She made it for us when she was at our house, and I had to agree with her passion for this sandwich. It immediately reminded me of a Middle Eastern pizza I order that has this same tasting meat, layered over hummus that has been spread on a pita bread round, sprinkled with feta cheese crumbles, and then baked just until hot…I plan to do that with some of the leftover sandwich filling. Read more . Don’t be afraid of the cinnamon and raisins in this – they add a fantastic flavor, just hinting at their presence without overpowering the taste. This is my new obsession – and it’s even good for us!
Ingredients:
1/3 cup pine nuts, toasted lightly in a skillet
1 tablespoons extra virgin olive oil
1 bunch green onions, whites and greens sliced thinly
1 teaspoon saigon cinnamon (or regular cinnamon)
1 teaspoon sea salt
1/8 teaspoon pepper
2 garlic cloves, freshly minced
1 medium tomato, cut in half, seeds removed, tomato diced
1/4 cup golden raisins (the golden raisins really are best with this)
1 pound lean turkey meat (or ground beef or lamb, or combo)
1/4 cup greek yogurt
4 pita bread rounds, warmed (in microwave or in a skillet)
optional garnishes
1 cucumber, peeled and thinly sliced
1 tomato, thinly sliced
crispy romaine leaves
feta cheese, crumbled
hummus
tzatziki sauce (recipe follows in directions section below)
Directions:
1. Toast pine nuts in a small skillet over medium heat, stirring until nuts are barely browned; remove them from skillet and set aside.
2. Heat olive oil in a large skillet over medium heat.
3. Add white parts of sliced green onion, cinnamon, salt and pepper; cook until onion is tender, about 2 or 3 minutes.
4. Stir in minced garlic, diced tomatoes and raisins; cook over medium high heat until mixture is almost dry – this should only take a few minutes.
5. Add ground turkey, stirring until meat is cooked through.
6. Remove skillet from heat; stir in green parts of sliced green onion, yogurt and toasted pine nuts.
7. Serve mixture stuffed into warm pita halves with any of the optional garnishes, or just as is.
8. For pizza, butter one side of a pita round and toast in a skillet until browned on the bottom.
9. Place pita on baking sheet, and spread hummus to within 1/2” of the edges.
10. Top hummus with cooked meat filling, and top with some crumbled feta.
11. Bake at 400 degrees until just warmed through, about 5 minutes.
12. Top with optional ingredients, if desired, of chopped tomatoes, onions, parsley, or anything else you think sounds good!
13. Tzatziki Sauce:
14. 1 cucumber, peeled, cut in half lengthwise, seeds removed from center, cucumber finely diced and pieces squeezed as dry as possible with some paper towels
15. 1 cup Greek yogurt
16. 1 tablespoon extra virgin olive oil
17. 2 or 3 garlic cloves, freshly minced, to your taste
18. salt, to your taste
19. To prepare tzatziki sauce, mix all ingredients together in a bowl, and allow it to set for a couple hours minimum; keep sauce refrigerated.
