Microwave Mexican Manicotti

This is an economical and fast recipe that plates well and tastes even better. I found this recipe years ago in a Better Homes and Garden magazine.
Ingredients:
1 lb manicotti (uncooked)
1 lb lean ground beef
1 (16 ounce) can refried beans
12 ounces pace picante sauce (medium)
12 ounces water
2 teaspoons cumin
1 tablespoon oregano
2 cups monterey jack cheese (shredded)
sour cream
sliced olive
green onion (chopped)
shredded lettuce
tomato (chopped)
Directions:
1. Combine ground beef, refried beans, cumin and oregano in large bowl and mix well. Stuff manicotti tubes with meat mixture and place in 11x13 in microwave safe baking dish. Combine picante sauce and water and pour over manicotti. Cover dish with plastic wrap and microwave on high for 10 minutes.(If you don't have a carousel in your microwave rotate pan halfway through cook time) Remove dish from microwave and turn manicotti noodles over in the pan. Re-cover the dish and return to the microwave. Microwave on high for 15 minutes. (again rotating once during cook time). Remove plastic wrap and cover with cheese. Return to microwave for 3 - 5 minutes for cheese to melt. Serve with all the fixins!
