Microwave Lemon Curd

Ingredients:

  • 4 organic lemons ( juice and zest - so make sure they are organic!!)
  • 450 g sugar (1 3/4 cups)
  • 4 eggs
  • 100 g butter

Directions:

  1. Place all ingredients into a Pyrex pitcher or glass bowl;
  2. Beat the eggs, zest the lemon directly into the bowl and cut the butter into smallish pieces.
  3. Cook on HIGH for 1 minute. Remove and whisk.
  4. Cook for another minute, remove and whisk.
  5. Repeat this process a few times until the miquid will coat the back of a soup spoon - DO NOT OVERCOOK - the eggs will curdle.
  6. Remember, the liquid will solidify more as it cools.
  7. I pour the liquid into HEATED jam jars, replace the lids and allow them to cool, then keep in the fridge until needed.
  8. If unopened, it can keep several months in the fridge.
  9. Once a jar is opened, I'm sure you'll have no problem finishing it in one sitting - with a spoon! Ha!!!
