Mexico Chiquito Hot Sauce

Easy, rich, not too spicy hot sauce recipe patterned from the Mexico Chiquito restaurant in North Little Rock, AR. Our family's fave restaurant for over 50 years!
Ingredients:
1 large 32 ounce hunt's whole tomatoes
1 large fresh jalapeno pepper, cut top off
3-5 cloves garlic, smashed
1/2 -2 teaspoons salt, or salt to your taste
Directions:
1. In food processor puree whole pepper, garlic, and salt into a paste
2. In blender puree tomatoes taking care to not LIQUEFY!
3. Put both mixtures into a bowl and stir to blend
4. Put in refrigerator for a few hours to serve cold with hot tortilla chips
5. Keeps for a good while in the fridge or sterilize and can if you like
