I change this every time I make it.
Ingredients:
12 oz sweet corn, drained
19 oz black beans, drained (or chick peas)
1/2 cup red onion, chopped
1/2 cup red pepper, choppped
1/2 cup fresh coriander (cilantro), chopped
1 cup fresh tomato, chopped
3 tbsp lime juice (opt or salsa)
2 3/4 cup rice, cooked
Directions:
1. Combine all ingredients. Toss well, chill and then serve.
