A hearty chili type dish that's a meal in a dish. This will feed two hungry adults as is, or you can adjust the amounts and make enough for a crew ! Put it in a slow cooker and let it simmer on low for several hours. If you aren't counting calories or fat, serve with Sour Cream, shredded Cheddar Cheese, or even a dollop of Guacamole. I add the hominy later so it doesn't get mushy. This is similar to chili, you can add what you like, or spice it up if you like things hot. Try adding a can of Rotel to below recipe.
Ingredients:
8 ounces extra lean ground beef
1/2 cup chopped onion
1 (15 1/2 ounce) can diced tomatoes, with liquid
1 (15 1/2 ounce) can yellow hominy, drained
1 (4 ounce) can diced green chilies
2 teaspoons chili powder
1 teaspoon cumin powder
1 dash garlic powder
salt, to taste
Directions:
1. Brown Ground Beef and Onion.
2. Add tomtoes, diced Green Chilies, Spices, and Salt to taste.
3. Drain and rinse Hominy, set aside.
4. Put Meat and Tomato mixture into small size slow cooker.
5. Cook on low several hours or until heated through.
6. Shortly before serving stir in Hominy.
