Nice veggie side dish with a decided kick! Easy to do and good with grilled meats or even with tacos, burritos, tostados, etc. Save this for summer with good fresh veggies!
Ingredients:
2 medium zucchini, sliced
2 medium yellow squash, sliced
2 large onions, chopped
4 cloves garlic, minced
4 large red ripe tomatoes, peeled, seeded & chopped
1 can ro-tel tomatoes and chiles
1 stick butter
basil
salt and pepper
Directions:
1. Melt butter and saute garlic and onion until soft. Add zucchini and yellow squash and cook to tender crisp stage. Add can of RoTel and season to taste. Cook until well-combined. Add cheese and stir through just before serving.
