Ok, so the name isn't exactly the best but I wasn't really sure what to call it. It definitely has a mexican flair to it though. My husband and I needed to use up some beef and didn't have a whole lot in the house and this is what we came up with it. Turned out surprisingly awesome!
Ingredients:
1 lb ground beef
1 package knorr spanish rice
1 (8 ounce) can diced tomatoes
1 (8 ounce) can kidney beans
1 green pepper, chopped
1/4 cup onion
1 -2 cup water
2 tablespoons chili seasoning mix
1 teaspoon onion powder
1 teaspoon season salt
1 teaspoon pepper
1 teaspoon paprika
Directions:
1. Brown ground beef and drain.
2. cook rice per package directions.
3. mix everything in a big pot and bring to a boil and simmer for 10min.
4. serve with shredded cheese and sour cream.
