A nice change to the traditional cole slaw, very good with grilled foods
Ingredients:
2 limes
3 tablespoons vegetable oil
1 head cabbage ( i like purple or use half regular half purple )
4 - 6 ounces radishes
1 ounce fresh cilantro
salt and pepper to taste
Directions:
1. Squeeze 3 tablespoons juice from limes ino a large glass bowl. Add vegetable oil and whisk.
2. Rinse cabbage, radishes, and cilantro.
3. Finely shred enough cabbage to make three quarts.
4. Thinly slice radishes to make about 1 cup.
5. Chop enough cilantro to make about 1/2 cup.
6. Add cabbage, radishes, and cilantro to dressing.
7. Mix gently.
8. Add salt and pepper to taste.
