This is an easy and quick weeknight meal. Great for when you need to get dinner on the table in 30 minutes.
Ingredients:
1 lb vegetarian sausage (gimme lean)
1 onion, diced
1 bell pepper, diced
2 cups uncooked elbow macaroni
1 (28 ounce) can tomatoes
1 (11 ounce) can mixed mushrooms, drained
1 tablespoon sugar
1 teaspoon salt
1 tablespoon chili powder
1 (8 ounce) carton dairy free sour cream
Directions:
1. In a large skillet, saute the sausage, onion and bell pepper until vegetables are tender.
2. Combine the rest of the ingredients, except the sour cream, cover and simmer for 15 minutes, stirring occasionally.
3. Add sour cream and cook for another 5 minutes.
