A delicious mexican side dish -no meat-no fat low in carbs -high in fiber and nutrients.
Ingredients:
4 cups tomatoes (i use 2 cans rotel)
1 cup corn
1 jalapeno, diced
1 cup kidney bean, drained
1 onion, diced
1/4 teaspoon cumin
1/4 teaspoon chili flakes
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons oil
Directions:
1. In a large skillet-heat oil and saute fresh jalapeno with onion,cook till soft-add rest of ingredients and simmer 30 minute.
