Eggs with veggies and taco seasoning
Ingredients:
1/2 cup egg beaters
1/6 cup onion, diced
1/6 green bell pepper
1/6 red bell pepper
6 slices mushroom
1 1/2 tsp taco seasoning
1/2 ounces cheddar cheese
Directions:
1. Spray medium skillet with nonstick cooking spray. Add onions and sautee until partially cooked. Add peppers and mushrooms for a minute or so.
2. Add egg substitute to the skillet and allow to begin to cook. Add taco seasoning and blend well into egg mixture.
3. Once eggs cook to a desired consistency, top with cheddar cheese and serve.
