Ingredients:
1 lime zested and juiced
3/4 cup(s) uncooked rice rice
1 bag(s) frozen corn
1 can(s) black beans rinsed
1 can(s) sliced black olives
1 container(s) cherry tomatoes sliced in half
pepperjack cheese
cheddar cheese
1 jar(s) salsa
1/4 cup(s) oil
onions chopped
doritos crumbled
Directions:
1. zest lime; squeeze lime. Cook rice and add zest to it. Mix salsa, salad oil and lime juice. Mix all ingredients together. Add lettuce if you want but might need more dressing (another lime, etc.)
