I am known for my rice. Its my thing . What I get asked to make by everyone for everything. I use large pieces of vegetables so kids can pick out what they don't like. They are mostly in just for flavor anyway. Read more . This makes one full 10-in skillet full of rice.
Ingredients:
2 cups long grain rice
1/4 cup oil, (i used extra light olive)
3 3/4 cup water (or stock)
1 caldo de pollo boullion cube (if using water)
1 can tomato sauce
3 cloves garlic peeled and slightly smashed
1/2 onion, sliced thin
1/2 bell pepper, cut into strips
1/2 teaspoon cominos (cumin)
salt and pepper to taste
Directions:
1. Put oil into skillet over medium heat and add rice.
2. Stir and brown rice till medium brown.
3. Add onions and saute till soft.
4. Add garlic and bell peppers and saute about 1 minute stirring
5. Pour in other ingredients
6. Cover and lower heat to simmer for 15 minutes
7. Turn off heat and let sit 5 minutes.
8. Crack the lid when this is done or you will have mushy rice.
