Mexican Rice

This dish is similar to Spanish rice but with a more Mexican flavor.
Ingredients:
1 lb ground beef
16 ounces salsa
11 ounces mexicorn (whole kernel corn with red & green peppers)
1 1/2 cups water
1 teaspoon chili powder
1 1/2 cups uncooked instant rice
1 cup shredded monterey jack cheese
Directions:
1. Brown ground beef in lg skillet, drain.
2. Stir in salsa, corn, water and chili powder, bring to a boil.
3. Stir in rice. Cover, remove from heat. Let stand 5-7 min or until liquid is absorbed.
4. Fluff mixture with fork, sprinkle with cheese.
5. Cover, let stand 2-3 min or until cheese is melted.
