Ingredients:
2 cups quinoa, cooked
2 tomatoes, diced
2 onions, diced
2 bunches fresh cilantro, chopped
1 cucumber, seeds removed and diced
1/4 cup fresh lemon juice
2 jalapenos, seeds removed and diced
salt and pepper
Directions:
1. Combine all ingredients in bowl and mix. You can adjust the vegetables to you liking.
