Another tried and true delight sure to please those that like spicy food, which I do. The spicier the better for me. Serve this one with pride and be ready to hand out the recipe.
Ingredients:
1 deep dish pie crust
1/4 cup white onion chopped
1/4 cup green pepper chopped
1-1/2 cups pepper jack cheese shredded
1/4 cup cooked chorizo crumbled and well drained
2 tablespoons green chilies chopped
2 tablespoons cilantro chopped
4 eggs
1-1/2 cups half-and-half
1/2 teaspoon cumin
1 teaspoon salt
2 teaspoons freshly ground black pepper
Directions:
1. Sauté onion and green pepper in butter.
2. Place cheese in crust then add onion, pepper, chorizo, green chilies and cilantro.
3. Beat eggs and half-and-half together until slightly foamy then add cumin, salt and pepper.
4. Pour into pie shell until not quite full.
5. Bake at 350 until brown and domed.
6. Cool very slowly to avoid falling.
7. Cool before serving.
