A friend of mine gave me this recipe.
Ingredients:
4 fat free corn tortillas (soft taco size, about 8-inch in diameter)
1 (16 ounce) can black beans, drained and rinsed
1 cup salsa (mild or hot, smooth or chunky, you choose)
8 ounces low-fat monterey jack cheese or 8 ounces low-fat monterey jack pepper cheese
1 (4 ounce) can diced chilies (optional)
sliced onion (optional)
black olives (optional)
Directions:
1. Lightly coat a cookie sheet or jelly roll pan with oil spray.
2. Mash black beans and spread on tortillas.
3. Cover beans with salsa.
4. Sprinkle on chilies.
5. Add anything else that sounds good to you and cover with shredded cheese.
6. Bake at 375 degrees F for approximately 15 minutes or until cheese is melted and pizza is heated through.
