Mexican Pineapple And Custard Dessert

Ingredients:

Directions:

  1. Make custard sauce ahead of time, see recipe below
  2. For Pineapple:
  3. Mix sugar and rum.
  4. Slice horizontal wedge from pineapple.
  5. Lift top and remove fruit carefully cutting into small chunks.
  6. Add sugar and rum to fruit.
  7. Return cut rummed fruit into pineapple.
  8. Top fruit with butter and cover entire pineapple with foil.
  9. Place on baking sheet.
  10. Bake 350 for 20 minutes or till heated well
  11. Serve warm rummmed pineapple with chilled custard sauce.
  12. For sauce: combine sugar cornstarch, milk and salt in
  13. Saucepan.
  14. Cook over low heat until smooth and thick ( 15 mins ).
  15. Add small amount of cooked custard to egg yolks; mix and pour into remaining custard over heat.
  16. Cook several minutes longer and thickned again
  17. Remove from heat .
  18. Add vanilla and chill well.
  19. Note: one may also use any favorite custard sauce for the recipe or even top the fruit with sweetened whipped cream!
