I prepared this Mexican-style pasta salad for our Labor Day bbq...it was a hit
Ingredients:
12 ounces tri-colored rotini
2 cups shredded monterey jack cheese
1 cup green bell pepper, diced
1 (15 ounce) can black beans, drained
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can kidney beans, frained
1/2 cup cilantro, finely chopped
1 (12 ounce) jar salsa, medium heat
Directions:
1. Cook pasta according to package directions. Drain and rinse under cold water.
2. Combine all ingredients in a large bowl and mix well.
3. Cover and refrigerate for 2 hours or overnight.
