Mexican Meatballs

A great make ahead appetizer that can be frozen and heated when you want to serve them.
Ingredients:
1 lb ground beef
3/4 to 1 cup breadcrumbs
1 egg
1/2 cup shredded taco cheese
salt and pepper, to taste
1/2 cup salsa
1 clove garlic, minced
Directions:
1. Mix all ingredients and shape into 1 balls.
2. Brown meatballs on all sides in a large skillet.
3. Continue cooking for 12 minutes.
4. Serve on wooden toothpicks.
5. Serve with warm BBQ sauce or additional salsa as a dip.
6. Cooked meatballs can be frozen and reheated in a 400 degree oven for 7 minutes.
