This dip is perfect with tortilla chips. Just made it for the first time last week and I loved it so much that I will be making it again very soon. We made our own refried beans and salsa for the recipe so it was quite a bit of work but well worth the effort.
Ingredients:
(2) 15 ounce cans of refried beans or your own refried beans recipe
1/2 cup mayonnaise
1/2 cup sour cream
2 avocados, peeled, pitted and chopped
2 t fresh lemon juice
1/2 cup salsa
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
5 green onions, chopped
4 ounce can sliced black olives
tortilla chips
Directions:
1. Spread the beans in a 9 x 13 inch baking dish.
2. Combine mayonnaise and sour cream and spread on top of the beans.
3. Sprinkle the chopped avocados with the lemon juice.
4. Layer over the mayonnaise mixture.
5. Cover with the salsa.
6. Sprinkle with the cheeses, then onions .
7. Top with the sliced black olives.
8. Bake uncovered at 350 degrees for 30 minutes.
9. Serve with tortilla chips.
