Ingredients:

Directions:

  1. Preheat oven to 400°F.
  2. Combine first 7 ingredients in a bowl.
  3. Place 2 tortillas in an 11 x 7 inch baking dish coated with cooking spray.
  4. Spoon half of corn mixture over tortillas.
  5. Top with 3/4 cup cheese.
  6. Repeat layers, ending with cheese.
  7. Bake for 15 minutes.
  8. Let stand 2 minutes, then top each serving with 1 tablespoon sour cream.
