Mexican Haddock

a kicked up way to serve haddock (or any other mild white fish)...that EVERYONE loves
Ingredients:
1 lb haddock fillet
vegetable oil cooking spray
1/4 cup salsa
2 tablespoons mayonnaise (regular or lite)
2 tablespoons monterey jack cheese, shredded
1/2 teaspoon black pepper
Directions:
1. Coat each filet with with cooking spray.
2. Place fish in a baking dish.
3. Mix remaining ingredients until well blended and spread over fish.
4. Bake at 425 for 20 minutes. Fish is done when it flakes when tested with a fork.
