Mexican Egg Tortilla

Ready, Set, Cook! Special Edition Contest Entry: A traditional Mexican omelette that combines the fresh flavor from the vegetables and the warm of a home made healthy breakfast.
Ingredients:
1 cup simply potatoes diced potatoes with onion
3 eggs
2 morningstar farms veggie bacon strips
1/3 cup canned black beans
1/3 cup sun-dried tomato, chopped
Directions:
1. In a skillet, heat 1/2 tbs of Olive oil or Non stick spray.
2. Cook Simply Potatoes Diced Potatoes with Onion for about 5 min in a medium heat, until light golden brown.
3. Mix the rest of the ingredients in a bowl until well incorporated.
4. Add Simply Potatoes Diced Potatoes with Onion to these ingredients and mix well.
5. Pour back into the skillet and cook on low heat until medium gold brown (or eggs are cooked).
6. Enjoy!
