Ingredients:
1 (10 ounce) box couscous
1 medium zucchini
1 (14 ounce) can del monte crushed tomatoes with mild green chilies
Directions:
1. Prepare couscous in sauce pan by bringing 1 1/2 cups of water to boil.
2. Place zucchini in a steamer basket over boiling water. cover saucepan and steam 5-7 mins or until zucchini is bright green and tender.
3. Mix couscous and tomatoes and pour over zucchini and serve hot or cold.
