This is an excellent side dish for mexican meals. It's much quicker than rice and is also quite light and healthy. Ingredients:
1/2 cup chopped onion |
2 teaspoons crushed garlic |
1 tablespoon olive oil |
1/2 teaspoon chili powder |
1/2 teaspoon ground cumin |
1 cup chicken broth |
1 cup frozen peas |
1/2 cup chopped tomato |
1 tablespoon minced cilantro |
3/4 cup couscous |
Directions:
1. Saute onion and garlic in olive oil over medium heat until tender. 2. Stir in cumin and chile powder, and cook for 1 minute. 3. Add broth, peas, tomato and cilantro, and bring to a boil. 4. Stir in couscous, cover and remove from heat. 5. Let stand for 5 minutes. 6. Fluff with a fork before serving. |
