Mexican Couscous

This is an excellent side dish for mexican meals. It's much quicker than rice and is also quite light and healthy.
Ingredients:
1/2 cup chopped onion
2 teaspoons crushed garlic
1 tablespoon olive oil
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1 cup chicken broth
1 cup frozen peas
1/2 cup chopped tomato
1 tablespoon minced cilantro
3/4 cup couscous
Directions:
1. Saute onion and garlic in olive oil over medium heat until tender.
2. Stir in cumin and chile powder, and cook for 1 minute.
3. Add broth, peas, tomato and cilantro, and bring to a boil.
4. Stir in couscous, cover and remove from heat.
5. Let stand for 5 minutes.
6. Fluff with a fork before serving.
