My mom made this all the time when I was growing up and it was wonderful! It makes 2 loafs and it is so moist.
Ingredients:
1 cup yellow cornmeal
1 cup self rising cornmeal
1 cup pancake mix
1 cup grated onion
1 1/2 cups shredded cheedar cheese
1 tsp baking soda
3 tbls sugar
3 beaten eggs
1 lb cream style corn
1/2 cup cooking oil
1 cup evaporated milk
1 tsp salt
1 tsp cayenne pepper
Directions:
1. Mix everything together and pour in to 2 greased loaf pans and bake 35-40 minutes at 375.
