Mexican Corn Stuffing Casserole

This is one of our favorite side dishes at Christmas and Thanksgiving. A must for a successful dinner. Enjoy
Ingredients:
5 cups crumbled corn bread
15 ounce can creamed corn
3/4 cup diced onion
3/4 cup diced red bell pepper
4 ounce can diced green chilies
1/4 cup shredded cheddar cheese
1/4 cup shredded pepper jack cheese
1 large egg lightly beaten
2 teaspoons finely chopped fresh cilantro
1/2 teaspoon ancho chili powder
Directions:
1. Preheat oven to 350 then grease a baking dish.
2. Bake crumbled corn bread on a baking sheet stirring occasionally for 20 minutes.
3. Combine remaining ingredients in a large bowl then add corn bread and toss to evenly combine.
4. Do not over mix then transfer to prepared baking dish and cover.
5. Bake 40 minutes then uncover then bake an additional 10 minutes or until heated through.
