Ingredients:
4- eggs
1- can ( 15 1/4 ounces) whole kernel , drained
1- can ( 14 3/4ounces) cream style corn
1 1/2 -cups cornmeal
1 1/4- cups buttermilk
1- cup unsalted butter at room temperature
8- ounces chopped green chiles
2- medium onions , chopped
1- teaspoon baking soda
1 1/2- cups shredded pepper-jack cheese
1 1/2- cups shredded cheddar cheese
opt.........jalapeno and sweet red pepper rings for garnish
Directions:
1. preheat oven to 325 degrees F.
2. grease a 13x9 x2 inch baking dish
3. beat eggs in a large bowl, add kernel corn, cream style corn, cornmeal, buttermilk, butter, chiles, onions and baking soda mix well
4. stir in 1 cup each of the shredded cheeses.......
5. pour mixture into baking dish
6. bake uncovered for 60 minutes
7. top with remaining 1 cup of cheeses
8. let stand for 10-15 minutes before serving
9. garnish with pepper rings .........
10. makes 12-15 servings ................
