A Trader Joe's just opened by my apartment, and I discovered their fire roasted corn, which is amazing. We had this with stuffed green peppers. The next day we mixed some of the leftovers in with some bland salsa we had bought and hated, and it made the salsa not only edible, but really good.
Ingredients:
2 tablespoons canola oil
2 tablespoons butter
2 garlic cloves, minced
1 (16 ounce) bag trader joe's frozen fire roasted corn
1 (4 ounce) can chopped green chilies
1/2 teaspoon salt
1/4 teaspoon pepper
cumin (optional)
Directions:
1. Melt butter in canola oil on stove and sautee garlic until slightly brown.
2. Add frozen corn, chilies, salt and pepper.
3. Heat through.
