This is a simple slaw that is a very tasty side to Mexican dishes or even inside a taco. Easily tweeked to suit any tastes.
Ingredients:
1 (10 ounce) bag coleslaw mix
1/3 cup fresh cilantro, chopped
1/4 cup rice vinegar
2 tablespoons extra virgin olive oil
1/4 teaspoon salt
Directions:
1. Wisk cilantro, vinegar, oil and salt in a large bowl.
2. Add cabbage and toss well to coat.
3. Serve.
