Ingredients:
2 1/2 cup(s) romaine lettuce chopped
15 1/2 ounce(s) can black beans rinsed & drained
3/4 cup(s) tomato chopped
3/4 cup(s) jicama peeled & chopped
3/4 cup(s) corn kernals frozen or fresh
3/4 cup(s) radishes thinly sliced
1 large avocado diced
1 large red pepper chopped
1/4 cup(s) feta cheese crumbled
honey-lime dressing
1/4 cup(s) fresh lime juice
2 tablespoon(s) olive oil
2 tablespoon(s) honey
2 tablespoon(s) cilantro chopped
1 garlic clove peeled& minced
1 teaspoon(s) jalapeĀ±o pepper chopped
Directions:
1. Toss all salad ingredients in a large bowl. In separate bowl, mix dressing ingredients. Pour dressing over mixture and toss again. Season salt and pepper to taste.
