My granddaughter showed me how to make this authentic Mexican rice. It's mild so it goes well with spicy Mexican entrees such as my Mexican Lasagna. If you wanted to serve it with something mild, you could spruce it up with some diced jalapeƱos or hot salsa. Read more . The most important thing I learned about making this rice is that you have to break it, in other words, to make the grain break so it absorbs the liquid throughout, and not just through its outer shell. You do that by frying it in hot oil until it almost begins to brown; then add the liquid.
