I had a bunch of beautiful New Zealand strawberries from the farmer's market leftover from a catering I did, a basket of blackberries, cream cheese, heavy cream, a glass trifle dish I had never used-and I wanted to bring a dessert to my boyfriend's parents for Christmas Dinner. Read more . Hence, this recipe was born! :-)
Ingredients:
6 tablespoons sugar, divided
2 pints fresh strawberries, hulled, halved
1 pint fresh blackberries
4 ounces cream cheese, softened
2 cups whipping cream
1 pound cake (see recipe below)
1/2 cup seedless raspberry jelly, melted
cream sherry
pound cake
1/2 cup (1 stick) butter, softened
3 cups sugar
5 eggs
3 cups cake flour
1 cup milk
2 teaspoons pure vanilla extract
zest of one large lemon
Directions:
1. For the cake:
2. Grease and flour a 10-inch bundt pan.
3. In a large bowl, using a mixer, combine the butter and sugar until creamy. Add the eggs, 1 at a time, beating well after each addition. Add the flour and milk alternately, beginning and ending with the flour. Stir in the vanilla and lemon zest. Spoon the batter into the prepared pan.
4. Place pan in a COLD oven and heat oven to 325 degrees F. Bake cake for 1 hour. Increase the temperature to 350 degrees F and bake for 30 minutes more. IMPORTANT NOTE: Do not open the oven door while baking!
5. Cool the cake in the pan for 10 minutes, and then turn out onto a wire rack to cool.
6. For the filling and berries:
7. Gently stir 3 tablespoons sugar into sliced berries; set aside. Beat the remaining 3 tablespoons sugar into cream cheese. Whip cream until stiff peaks form, then fold into the cream cheese mixture.
8. To assemble:
9. Cut cake into slices about 1/3-inch thick. Arrange a layer of slices in the bottom of a glass bowl; sprinkle with a teaspoon of sherry and drizzle with melted jelly, then add a layer of strawberries and a layer of cream cheese mixture. Continue layering, ending with a layer of cream cheese mixture. Garnish with a few whole or sliced berries.
