Meringue w/Mango-Ginger Sauce

Ingredients:
3 egg whites whipped
1/4 teaspoon(s) vanilla
1/4 teaspoon(s) cream of tartar
1/4 cup(s) bakers sugar
1 large mango (might need more) puree
1 tablespoon(s) ginger finely grate
fresh berries & summer fruit
1 sheet parchment paper
Directions:
1. Meringue -
2. Let egg whites sit out 30 min. then Pre-heat oven to 320
3. Beat egg whites- adding vanilla and cream of tartar until soft peaks form
4. Gradually add sugar 1 T. at a time until stiff peaks form
5. Place in small mounds (about 3 diameter) on cookie sheet lined with parchment paper and bake 15-20 min. 320 - Check and continue 5 min. if necessary
6. Can make earlier in day and leave out - then refrigerate covered.
7. Mango/Ginger Sauce -
8. Strain mango or puree in food processor (faster)
9. Finely grate ginger (1+ T.) to taste
10. Place meringue on plate, spoon the mango/ginger sauce in circulator motion on plate. Use pieces of summer fruits (mango, peach, plum, kiwi) and berries placed on top of sauce.......Delicious!
