Here in Manitoba the days are already frosty and cold. No better way to warm up than with old country style bean soup, or Schaubel Sup as my folks called it. Add some homemade noodles and a splash of cream and it's a hearty meal. Read more . Be sure you have lots of crusty bread for dunking!
Ingredients:
2litres chicken broth
about 2c cubed ham or 1 farmer sausage
1large onion chopped
1 1/2 c celery, chopped
couple cloves garlic, smashed
about 4-6 cups of frozen green beans, yellow beans, carrots combo (i get mine from costco), or equivalent mixture of fresh.
1 bay leaf
some whole peppercorns
few sprigs of summer savoury (use thyme if you don't have savoury)
2-3 large potatoes cubed
salt to taste
sprinkle of red pepper flakes
Directions:
1. Grab a stock pot, I think mines about 8L capacity, and put in your chicken broth and meat.
2. Add onion,celery.garlic,bay leaf, peppercorns, savoury, red pepper flakes,and salt.
3. Bring to a boil over med-high heat
4. Add potatoes and bean/carrot mix
5. Return to boil,then turn down to simmer.
6. Simmer about 30 min til potatoes are done, or longer if you enjoy a long slow simmered soup.
7. Add water if soup is getting too thick.
8. My mom would always boil, then lightly saute some homemade noodles (kielke) and put them in the soup bowl before adding the soup. Finish off with a splash of half and half if desired. Serve with some nice crusty bread and butter. True comfort food!
