Melt In Your Mouth Pecan Shortbread

I inherited this jewel from one of my adult students several years ago when she brought it to a final exam project presentation ~ KUDOS to you, RayeLynn! It’s been one of my very favorites since then. I’ve left the recipe “in her own words. Read more .” These will melt in your mouth! Yumm! Enjoy!
Ingredients:
1 3/4 cup plain flour (don’t substitute self rising, here.)
1/2 cup sugar
1 cup butter
1/2 teaspoon vanilla
pinch of salt
1 cup pecans, lightly toasted and coarsely ground
2 teaspoons almond extract
Directions:
1. Preheat oven to 325.
2. Mix butter and sugar until fluffy. Gradually add flour. Add vanilla, salt. Stir in pecans and almond extract. Chill dough 1-2 hours. Lightly flour surface and roll out dough to 1/4 inch thick. Sprinkle surface with sugar. Cut our with 2 1/2 “ cookie cutter. Lay on parchment paper lined cookie sheet. Bake for 15-20 minutes. Do not brown.
