Melt In Your Mouth Butter Cookies

When we moved to Fremont, NE in the 1980's, a neighbor made these to welcome us – what a great neighbor! They've been a favorite cookie of ours ever since. They are very delicate and crispy, and tend to be quite fragile. Read more . Use tinted frosting to perk up their color - I always used to make them for Valentine's Day with pink frosting and a few red sprinkles.
Ingredients:
1 cup (2 sticks) butter, softened
1/3 heaping cup powdered sugar
1 teaspoon vanilla extract
1 cup flour
3/4 cup cornstarch
dash of salt
Directions:
1. Cream together butter, sugar and vanilla.
2. In separate bowl, mix together flour, cornstarch and salt; stir into creamed mixture.
3. Drop by spoonfuls onto lightly greased cookie sheet, flattening cookies with your fingertips (don’t flatten too thin or cookies will break) and keep in a round shape. NOTE: I have found recently, that this dough is actually easy to pick up a small piece and roll into a ball (should be about the size of an acorn), then place on a lightly greased cookie sheet and flatten gently with the palm of your hand...much easier than trying to drop by spoonful and then shape into a circle!
4. Bake at 350 degrees for 14 minutes, until just barely browned on top or around the edges.
5. Cool several minutes; remove carefully from cookie sheet...the cornstarch and powdered sugar make these cookies very crisp and delicate, and they will break easily if not handled with a gentle hand!
6. Cool on waxed paper; frost with powdered sugar frosting, tinting it a soft pastel, if desired.
7. NOTE: My daughter's favorite frosting on these is the Browned Butter Caramel frosting that I have posted separately.
