This recipe is one of my grandmother's and I remember this one being one of the many cookies my mother and I would make every year for Christmas. Change the shape and the color of the icing, and I think you'd have a really cute easter cookie! Read more !
Ingredients:
1/2 lb butter
3/4 cup cornstarch
1/3 cup confectioners/powdered sugar
1 cup flour
1 tsp vanilla
8 oz cream cheese, softened
1 cup confectioners/powdered sugar
1 tsp vanilla
food coloring
Directions:
1. Preheat oven to 350 degrees
2. Blend the first five ingredients together in a bowl. Cover the bowl and chill all the way through.
3. Break off pieces and roll to about the size of a marble. Place on cookie sheet. They don't spread much so you can put them fairly close together.
4. Bake for 12 minutes until lightly brown.
5. Cool. The cookies can be frozen at this point for consumption at another time.
6. To make the frosting, combine the cream cheese, powdered sugar and vanilla. If making more than one color, divide into separate bowls. Add food coloring to make the desired color(s).
7. Apply frosting generously. These may be frosted the day before serving and stored in the refrigerator.
