Mouth watering boiled Cajun peanuts. Yes, it really does take this long to make them, but they are sooo worth the wait.
Ingredients:
1 lb bag raw peanuts
2 tbsp cayenne pepper
1 c kosher salt (or to taste)
1 tbsp lawrey's cajun seasoning salt
frank's hot sauce (approx. 2 cups)
Directions:
1. Rinse peanuts in water. In 3 1/2 qt Crock pot add peanuts and fill 2/3rds with water. Pour salt in to brine the peanuts. Add salt to taste. I believe I may have used about a cup, but didn't measure. Make sure there is room in the pot to add the hot sauce.
2. Add the cajun seasoning salt (again to taste) as well as cayenne. Then add frank's hot sauce to fill the crock pot to the normal capacity. I think it may have been a couple of cups worth of sauce .
3. Cook peanuts on high for 18 hours+.. stirring often. I had to put a bowl to hold down the peanuts as they float until they become waterlogged with sauce.
4. Makes a slew o'nuts.
