A refreshing salsa with canteloupe melon, chili, lime & mint. Serve with grilled white meats or fish.
Ingredients:
1 cantaloupe
1 lime, juice of
2 red chili peppers, deseeded and finely chopped
1 tablespoon mint, finely chopped
1 red onion, finely chopped (optional)
Directions:
1. Peel the melon with a knife, cut in half and scoop the seeds out.
2. Chop the flesh roughly and add the remaining ingredients, mix well.
3. Leave for about half an hour to allow the flavours to combine.
4. Serve with grilled white meats or fish.
