This excellent bread is very moist and has the texture of pumpkin or zucchini bread, and a gorgeous orange colour.
Ingredients:
3 eggs
1/4 cup canola oil
1/2 cup unsweetened apple sauce
1/4 cup mashed banana
2 teaspoons vanilla
1 teaspoon salt
1 1/2 cups of sugar
2 cups pureed cantaloupe
1 1/2 teaspoons baking soda
1 teaspoon baking powder
2 cups flour
1 cup rice flour
1 teaspoons cinnamon
1 teaspoon ground ginger
Directions:
1. Beat eggs, oil, applesauce, banana, vanilla, salt and sugar.
2. Add cantaloupe to the egg mixture and blend.
3. Sift the dry ingredients together and add to the melon mixture. Mix well.
4. Pour into 2 greased loaf pans.
5. Bake in a 325° oven for 1 hour.
6. Cool in pans 10 minutes, then un-mould onto wire rack.
