Melon and Prosciutto Salad With Strawberry Salsa

Chef Grant Morgan from Hotel Zaza in Dallas, TX has a refreshing fruity salad that will get you in the mood for spring. Very easy to make, and delicious.
Ingredients:
1 cantaloupe
1 lb prosciutto, thinly sliced
2 cups strawberries, diced
2 tablespoons sugar
2 tablespoons sunflower oil
1 lemon, zest of
1/2 teaspoon fresh ginger, finely chopped
Directions:
1. Peel, seed and clean cantaloupe; cut into bite-sized pieces and set aside.
2. In a separate bowl, mix sugar and strawberries by mashing together with a spoon.
3. Mix in oil, lemon zest and ginger into the strawberry mixture and combine well.
4. Arrange the melon and prosciutto on a plate, spoon salsa over.
5. Serve immediately.
