I first had green sauce at a nearby Mexican restaurant and loved it. I wanted to recreate but kick it up a notch. I was very happy with how this turned out. Note: this is VERY spicy! Cut down the peppers if you like mild flavor. :)
Ingredients:
1 serrano pepper, seeded & roughly chopped
3 tomatoes, cut into 1/4 's
1/2 bunch cilantro
1/2 red onion, cut into 1/4 's
1 garlic clove
2 avocados, peeled
1/2 cup light sour cream
2 teaspoons salt
Directions:
1. Place pepper, tomatoes, cilantro, red onion, and garlic clove in food processor. Process until it looks like salsa.
2. Add 1 avocado, pulse until mixture turns light green.
3. Add the next avocado, pulse until mixture looks lighter.
4. Add sour cream and pulse until mixture is smooth to your liking.
5. Add salt and pulse one last time.
6. Serve with tortilla chips, quesadillas, whatever you like.
7. [Note the color might not be the prettiest, but it sure is tasty! ;)].
